To save the admin or sub-admin user actions as logs in the Magento 2 store backend you can check the Magento 2 Admin Action Logs extension.
This extension will allow you to save the actions pertaining to the admin sub-admin user login/logout/ or failed attempts, and the add/edit/delete actions performed for the products and categories of the Magento 2 store.
